Banana and Sultana Muffins

Hello my lovelies!

Is anyone else going crazy being stuck in the house because of the snow or is it just me!? To help keep me entertained I’ve been doing some baking and thought I’d share what I’ve been making with you guys!

I’m currently trying to eat healthier in my quest to gain some muscle and feel stronger 💪 so I’ve been looking for some low-calorie muffins and found these little beauties!

These muffins only take 15 minutes to prep and 20 minutes to bake so you could whip these up in no time!


  • 250g self-raising flour
  • 1 tsp ground cinnamon
  • 1 tsp bicarbonate of soda
  • Finely grated zest of 1 lemon
  • 2 ripe bananas
  • 250ml semi skimmed milk
  • 75g Sultanas
  • 3 medium egg whites
  • 1 tbsp golden caster sugar

First, mix the flour, cinnamon, bicarbonate of soda and lemon zest together.

Then, mash the banana with a fork and add the milk, combine this mixture with the flour mixture and add the sultanas.

Next, whisk the egg whites until they form soft peaks and gently add them to the mixture, carefully fold them in so you don’t knock the air out of them.

Finally, divide the mixture into 12 muffin cases, sprinkle the golden caster sugar over the muffins to add a crunchy topping and bake for 20 minutes at 190 fan oven 😁

These are only 119 calories per muffin, bonus! They are super low in fat so they might stick to the cases a bit!
